Do I need 3 rings on my Specialized Enduro or should I get a twin set with bash guard? It’s going to be used for the likes of Guisborough, Hamsterley etc, not for DH as I’ve got the Big Hit for that,

Twin & bash for me – I never use the big ring, so ground down the 42 teeth for a cheap basher. 8)

Will I notice the difference going from 175mm crank arms to 170mm?

Yes. You’ll be missing logs and rocks that are 4.99mm higher than the ones you currently hit. 😛

Pedalling? I wouldn’t think so, TBH.
